The smell of baked cookies in the oven is something no one ever can forget. Something about a classic cookie during the holidays always needs to be shared with always makes it better! I stumbled on this recipe on Pinterest and decided that it needed to be shared with you!!
I also thought I’d break the ingredients into parts, keeps it easier to read during the baking process. Happy creating!!
Ingredients:
- 1/2 Cup old fashioned oats
- 2 1/4 All-Purpose Flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon ground cinnamon

- 1 cup unsalted butter, melted
- 3/4 Cup brown sugar, packed
- 3/4 Cup granulated sugar

- 1 tablespoon vanilla extract
- 1/2 teaspoon lemon juice
- 2 large eggs

- 3 Cups chocolate chips
- 1 1/2 Cups chopped walnuts (optional)
- Place oats in a food processor/blender and grind till it turns into powder. Place in Medium bowl and whisk the FIRST portion of ingredients.
- In a Large bowl, melt the butter and the SECOND portion of the ingredients until smooth, (mixer unnecessary, use wooden spoon).
- Add THIRD portion of ingredients into the melted butter bowl, stir till smooth.
- Add the medium bowl of dry ingredients into the liquids. Add the chocolate chips (and/or walnuts).
- Line cookie sheet with wax/parchment paper and scoop 1/4 cupful of dough into a ball. No need to space, only needed for chilling. Cover well with plastic wrap for 4 hours or overnight before baking.
- Preheat oven 350ºF, space cookies well, slightly press each ball down with your palm. Bake for 13-17 minutes, watch to make sure it does not over bake. Best made slightly under done.
