Infused Lavender Balsamic + Blueberry & Corn Salad

Before you think, whoa blueberries and corn, YUCK! Believe me I thought the same thing too when I read the recipe. Once you actually put everything together, its super flavorful and delicious. The taste of salty and sweet comes to mind when I bite in. Best part, no baking required and super duper simple to make!

I started with my frozen sweet corn from Trader Joes, cooked them then waited for it to cool down before adding blueberries.

Once I added blueberries, I added the chives and 1/4 teaspoon of white vinegar.

Since I didn’t have any white balsamic vinegar at hand, I used my lavender balsamic vinegar instead. I realize that it was the best compliment to the blueberries, a burst of flavor.

Last but not least was the feta cheese crumb. And that’s it! You’re done. I didn’t really follow the instructions from the magazine but figured, try something that works for you right?

INGREDIENTS 

3 cups of sweet corn

Handful of blueberries

3 tablespoons of lavender balsamic

1/4 teaspoon white vinegar

2 pieces of chives thinly cut

1/4 cup of feta (or as much as you want)

— Mix all ingredients before adding feta cheese.
